My husband and I designed the layout of this kitchen so that I’d have ample storage and work room. I’ve always loved white as a background. White allows you to bring in color for every season while giving you a crisp, clean look. Now if I just had someone to clean up when I’m done, I’d have the perfect kitchen.

I love to cook and bake. Whether I’m cooking up comfort food, decorating a cake or doing my holiday baking, I am happiest in the kitchen. I’ve won awards for both and like having room to play. I grew up being in the kitchen. I cooked my first complete Thanksgiving dinner for twenty at the age of twelve. I learned by doing from my (step) mom. She sat at the table and gave me directions, step by step.

Soft Batch Apple Cider Gingersnap Cookies by iowagirlseat

gluten free    MAKES 4 DOZEN COOKIES

1/2 cup butter, softened to room temperature

1 cup sugar, plus more for rolling cookies

1/4 cup unsweetened applesauce

1/4 cup apple cider

1/4 cup molasses

1 egg

1 teaspoon vanilla

2-1/3 cups gluten-free or regular all-purpose flour (I used Domata)

2 teaspoons baking soda

2 teaspoons cinnamon

1-1/2 teaspoons ground ginger

1 teaspoon ground cloves

1/2 teaspoon salt


Cream together butter and sugar in a mixing bowl on high speed until light and fluffy. Add applesauce, apple cider, molasses, egg, and vanilla then mix until combined – mixture may look curdled. In a separate bowl whisk together the remaining ingredients then add to the wet ingredients in three batches, mixing until just combined before adding the next batch. Cover then refrigerate for at least two hours or up to overnight (dough will be soft.)

Preheat oven to 350 degrees then line baking sheets with parchment paper. Scoop cookie dough by the Tablespoon into a bowl of sugar then roll to coat and place on prepared baking sheet. Bake for 10-12 minutes then let cool for a few minutes before transferring to cooling racks.     1. Those do sound good. Since one of our little ones has to have gluten free things this will be great.

      1. T – I just checked. I use Gluten Free All-Purpose Rice mixed flour from Betty Crocker. Comes in a box. I used to get it at Walmart but now that I don’t shop there, I’ll have to check other stores and cross my fingers. 🙂 Or I’ll be ordering on -line. Thanks for having me on today! Hugs
