Sizzle in the Kitchen with Author Angela Drake

Soft Batch Apple Cider Gingersnap Cookies

Angela Drake believes in happy endings, the magic of ‘what if’ and second chances. When not living vicariously through her characters, Angela spends her day working social media accounts for musicians and authors. She enjoys time with her granddaughters, gardening, journal writing, and a myriad of artistic pursuits. She shares a home in the Ozarks with her husband, two dogs and three cats.

My husband and I designed the layout of this kitchen so that I’d have ample storage and work room. I’ve always loved white as a background. White allows you to bring in color for every season while giving you a crisp, clean look. Now if I just had someone to clean up when I’m done, I’d have the perfect kitchen.

I love to cook and bake. Whether I’m cooking up comfort food, decorating a cake or doing my holiday baking, I am happiest in the kitchen. I’ve won awards for both and like having room to play. I grew up being in the kitchen. I cooked my first complete Thanksgiving dinner for twenty at the age of twelve. I learned by doing from my (step) mom. She sat at the table and gave me directions, step by step.

From the moment he sees Stephanie across the crowded restaurant, Brendan Keane knows he has to have her… and does. Unaware that four years later, their lives would take different paths and Stephanie will marry someone else. After the murder of her husband, Stephanie Douglas takes her two children and moves to the Ozarks, carrying with her a secret she’s harbored for ten years. When Stephanie’s company, ’Planned to Perfection’, is called upon to plan his daughter’s wedding, Brendan’s back in her life. And this time Stephanie fears she won’t be able to tell him good-bye.

Soft Batch Apple Cider Gingersnap Cookies by iowagirlseat

gluten free    MAKES 4 DOZEN COOKIES

1/2 cup butter, softened to room temperature

1 cup sugar, plus more for rolling cookies

1/4 cup unsweetened applesauce

1/4 cup apple cider

1/4 cup molasses

1 egg

1 teaspoon vanilla

2-1/3 cups gluten-free or regular all-purpose flour (I used Domata)

2 teaspoons baking soda

2 teaspoons cinnamon

1-1/2 teaspoons ground ginger

1 teaspoon ground cloves

1/2 teaspoon salt

Directions

Cream together butter and sugar in a mixing bowl on high speed until light and fluffy. Add applesauce, apple cider, molasses, egg, and vanilla then mix until combined – mixture may look curdled. In a separate bowl whisk together the remaining ingredients then add to the wet ingredients in three batches, mixing until just combined before adding the next batch. Cover then refrigerate for at least two hours or up to overnight (dough will be soft.)

Preheat oven to 350 degrees then line baking sheets with parchment paper. Scoop cookie dough by the Tablespoon into a bowl of sugar then roll to coat and place on prepared baking sheet. Bake for 10-12 minutes then let cool for a few minutes before transferring to cooling racks. Store in an airtight container for 3-4 days    https://iowagirleats.com/2014/10/01/soft-batch-apple-cider-gingersnap-cookies-gluten-free/ for more tasty ideas from one of Angela’s go to websites. 1. Those do sound good. Since one of our little ones has to have gluten free things this will be great.

      1. T – I just checked. I use Gluten Free All-Purpose Rice mixed flour from Betty Crocker. Comes in a box. I used to get it at Walmart but now that I don’t shop there, I’ll have to check other stores and cross my fingers. 🙂 Or I’ll be ordering on -line. Thanks for having me on today! Hugs
